Fine-dining restaurant will play host and curator for collective dinner

Vail, Colo. (May 2018) – As a part of the GoPro Mountain GamesLarkspur Events & Dining will host the Whole30 Dinner Experience; a collaboration between Whole30 Co-Founder and CEO, Melissa Hartwig and the Larkspur team, next month on Thursday, June 7.

The culinary event commences at 6p.m. It will feature a mocktail hour meet & greet that brings together a combination of talent and education followed by a four-course Whole30 approved dinner, and a fun interactive dessert station, all prepared by owner Thomas Salamunovich of Larkspur and Larkburger. The Whole30 event celebrates healthy mountain living and is a highlight to the GoPro Mountain Games, which hosts athletic competitions, free concerts, and mountain lifestyle events each year in Vail.

Together, Thomas and Melissa will emcee the evening as they talk through the program and each course presented. Following dinner, guests will have the opportunity to participate in a Q&A with Thomas and Melissa.

Whole30 ( is a 30-day dietary reset designed to help people improve their health, create new dietary habits, and change their emotional relationship with food.  It was co-founded by Melissa Hartwig in 2009 and has been changing lives ever since.

“Larkspur has always been my go-to restaurant in Vail during the Mountain Games,” said Melissa Hartwig, Whole30 CEO. “I’m thrilled to be working with Thomas to create a Whole30-themed dinner for my Colorado community. Guests will love the family-style seasonal meal, and because we’re keeping it intimate, I’ll get to connect with everyone personally and hear more about their Whole30 journey.”

Larkspur Events & Dining sets the standard for refined dining in the extraordinarily health conscience Vail Valley and they are committed to incorporating this ethos into their menus. The elevated events-based restaurant is the preferred choice amongst paleo, vegan, and vegetarian diners who are motivated by the staff’s commitment and dedication to a healthy food lifestyle.

Each of the ingredients on the menu were painstakingly examined and carefully curated by Thomas as he puts his spin on each dish to maintain the integrity of the Whole30 program.

“Working with Melissa to create this evening and menu for the Whole30 is one of the most exciting and interesting collaborations and menus that I’ve done in years”, said Thomas Salamunovich, Larkspur owner. “The significant guidelines and parameters of the food program actually give tremendous freedom to menu creation.”

The Whole30 is a 30-day dietary reset designed to change your health, habits, and relationship with food. For 30 days, you’ll eliminate foods the scientific literature and clinical experience have shown to be commonly problematic in one of four areas: your cravings and emotional relationship with food; metabolism and blood sugar regulation; digestion; and immune system. During the 30 days, participants see improvements in energy, sleep, attention span, mood, cravings, digestion, skin, aches and pains, allergies, and more. At the end of the 30 days, you’ll then carefully and systematically reintroduce these foods one at a time, like a scientific experiment, and compare your experience. By the end of reintroduction, you’ll know which foods are having a negative impact on how you look, feel, and live; and learn how to create the perfect, balanced, sustainable diet for you.
